Chicken Veggie Soup

Chicken Veggie Soup
• 2 tbs olive oil
• 1 large red onion chopped
• 1 celery stalks chopped
• 4 tbs minced garlic
• 64 oz carrot juice
• 4 cups water
• 1 pack baby carrots cut in half
• 3 oz pack julienned cut sun-dried tomatoes
• 1 pack frozen fire roasted corn
• 1 Roasted Chicken Shredded
• 1 pack cauliflower cut med-small
• 1 pack broccoli cut med-small
• 1 pkg fresh baby spinach
• 3 Bay Leaf
• 2 Tbs TJ’s 21 Season Salute
• 2 tsp sea salt
Preparation Steps
1. In an extra large pot heat oil and add onion, garlic and celery. Simmer until onion is translucent. Stir occasionally.
2. Add carrot juice, water, carrots, sun-dried tomatoes and spices and bring to a boil. Stir occasionally.
3. Add chicken, corn, cauliflower and broccoli. Simmer for 15 minutes. Stir occasionally.
4. Remove from heat. Stir in spinach.
5. Wait 5 minutes before eating.
